What’s For Dinner?

Last night Bear and I had a much anticipated “appetizer” night.  He is in love with my deviled eggs and I had been looking for a chance to try out my quesadilla dip!  The star of the meal though was an after thought.  I had bought up a pound of ground lean turkey without any intention of using it. I found it hiding in the back of my freezer last night and decided I was craving a little IKEA style meatball action so I set to making a replica recipe.  Turned out pretty good, too!

1 lb. lean ground turkey

1/2 c. italian seasoned bread crumbs

1 egg, beaten

1/2 tbspn. italian seasoning

1/2 tbspn soy sauce

1/2 tbspn wostershire sauce

1/2 small onion, minced

1 tbspn garlic, minced (less if you are using the canned variety)

a few dashes of hot sauce

Preheat oven to 400.  Mix all ingredients in a bowl thoroughly (I used my hands). If the mixture is runny, add a little more bread crumbs.  Use a tablespoon to measure each meatball into your hand and roll into a ball.  Place on a well grease or parchment paper covered cookie sheet.  Repeat with remainder of meat.  Pop into oven for 30 minutes or until cooked through.

I served them with toothpicks and chicken gravy!
